Chorizo & clams with linguini
Hello, friends! I hope these instructions are easy and useful! This is my first time posting a recipe via blog so let’s hope I don’t fuck it up too much. Cheers!
This recipe serves 2-3 people.
INGREDIENTS:
1 Onion
1 Head of Garlic
1 Lemon
1 Parsley
1 Oregano (Dried or Fresh)
3 Tomatillos
1 Fennel
1 Jalapeño
1 Red Jalapeño
1 Habanero
1 Lobster Mushroom (or your choice of mushroom)
3/4 Cups Chicken Stock
1/4 Cup Half & Half
1 Package Pork Chorizo
2lbs Clams
1 package Linguini
1/3 Cups Butter
Turmeric
Red Chili Flakes
Chili Powder
Avocado Oil
Salt/Pepper
1 Bottle Chardonnay (or any white wine of your preference)
Parmesan or Mozzarella Cheese
OK! Let’s fuckin’ goooooo. First things first!
Tomatillos
Start by putting your oven on broil.
Remove 2 fennel bases (which is white part at the bottom of the fennel) and dice them.
Toss them with the tomatillos, salt, pepper and avocado oil.
Put them in the oven for 10 minutes.
When removed, place in a blender and combine with 1/4 cup of chicken stock.
Blend until liquified and place aside in the refrigerator.
Chorizo & Veggies
I swear this is chorizo and not an actual piece of shit.
7. Sauté your chorizo with avocado oil for 5-7 minutes at medium heat.
8. Add your diced onion and fennel.
9. After about 3 minutes, add your chopped garlic, habanero and jalapeños.
10. Wait another 3-4 minutes and then add your turmeric, chili powder and red chili flakes, salt & pepper.
Noodles
11. At this point you should start a pot of boiling water. Remember your noodles will cook in 5-6 minutes, so this can be done toward the end when the sauce/clams are almost ready.
White wine sauce
12. Now add 1/2 cups chicken stock to your chorizo/veggies.
13. Add 1 cup white wine.
14. Add your blended tomatillo/fennel sauce.
15. Add 1/4 cups half and half.
16. Let it simmer at low/medium heat for about 10-12 minutes so the white wine can cook out.
Mushrooms
17. Chop your lobster mushroom (or mushrooms of your choice if you like mushrooms).
18. Sauté in 2 tbsp of butter and avocado oil. Add 3 dashes/pinch of oregano.
19. Sauté the mushrooms for about 5 minutes at medium heat. Then add to your chorizo sauce.
20. Time to add the clams!
Clams
21. Add your clams. Cook covered at medium heat for 5-7 minutes. REMEMBER! If any of the clams don’t open, don’t eat them. Discard that shit.
22. Toss in your parsley, lemon juice, dash of lemon zest, and and 1/4 cups butter and stir until butter is melted.
23. Add your noodles to your plate. Then add clams/sauce.
23. Shave some Parmesan or Mozzarella cheese and sprinkle on top!
